For those hectic days, say hello to these quick, easy breakfast ideas, which are guaranteed to put a pep in your step on even your craziest Mondays.

Smashed Avocado Toast with Egg

Always a favourite at Clean Beauty Collective, and just so damn good for you! The secret to making the best avocado toast out there? Smash the avocado with lemon juice, salt, and pepper for a flavour kick right when you need it. Want to power up the protein factor? Hard boil an egg the night before and keep it overnight in the fridge for adding sliced to your avo toast come morning. And if you have a little extra time, add some fresh radishes, chives and sesame seeds on top for something a little extra. 

Pineapple-Cucumber Smoothie

We love to start our day with a sweet n’ green blender beverage, and this recipe is so perfect for sipping on anytime during the day come the long, hot summer.

  1. Add ¼ cup of almond or oat milk, 1 tbsp of lemon juice and ½ cup of plain yogurt to your blender.
  2. Top with a handful of spinach and a few slices of cucumber, then ½ a banana and a few rings of sliced pineapple. 
  3. Puree all ingredients until smooth.

Classic Omelette and Greens

Simple yet delicious, this omelette is elegant enough for dinner, and easy enough for breakfast or brunch.

Ingredients:

  • 3 tbsp. olive oil, divided
  • ½ an onion, finely chopped
  • 4 large eggs
  • Pink salt
  • 1 tbsp. unsalted butter
  • Parmesan to your liking, finely grated
  • 1 tbsp. fresh lemon juice
  • Handful of baby spinach

Directions:

  1. Heat 1 tablespoon oil in large non-stick pan on medium. Add onion and sauté until tender, about 6 minutes. Transfer to a small bowl. 
  2. In a large bowl, whisk together eggs, 1 tablespoon water and ¼ teaspoon salt. Return pan to medium and add butter. 
  3. Add eggs and cook, stirring constantly with rubber spatula, until eggs are partially set. 4. Turn heat to low and cover pan tightly, cooking until eggs are just set, 4 to 5 minutes. Top with parmesan and cooked onion; fold in half.
  4. In a medium bowl, whisk together lemon juice and remaining 2 tablespoons olive oil. Toss spinach with vinaigrette and serve with omelette.

Chilled Overnight Blueberry and Coconut Chia

Wake up to a dreamy, creamy breakfast that “cooks” itself overnight.

Ingredients:

  • ½  old-fashioned oats
  • 1 ½  tbsp. chia seeds
  • 1 tbsp. honey
  • 2/3 cup light coconut milk
  • ½  tsp. lemon zest
  • Fresh blueberries

Directions:

  1. Add oats, chia seeds, honey and coconut milk to a medium sized jar or glass. 
  2. Cover; shake to combine and refrigerate. 
  3. To serve in the morning, stir lemon zest into the mix and top with blueberries.
  4. Enjoy!
